Patty's Martucci's Artichoke Pie Recipe
Ingredients
1 pack frozen artichokes (Available at Whole Foods or Traders Joe’s.)
4 eggs
1 small mozzarella
2 handfuls of grated parmesan cheese
I pack frozen pie shells
1 clove garlic
olive oil
salt
pepper

Thaw out and cut up one pack of artichokes hearts into small pieces.
In a small pan, heat about 5 tablespoons of olive oil. Chop one clove of garlic and sauté in olive oil. (Don’t let it brown). Add chopped artichoke hearts and saute in the olive oil and garlic for ten minutes. Add a little salt and pepper.
Grate mozzarella. In a bowl, beat four eggs and add grated mozzarella and two handfuls of parmesan cheese. Add cooked artichoke mixture. Mix well.
Fill bottom pie shell with mixture. Cover with top pie shell. Poke three to four slits in top pie shell.
Bake in oven at 375 degrees for 45 minutes to one hour.
Serve with salad, soup or just as an appetizer.
